These Copycat Great American Cookies Snickerdoodles are ultra soft and chewy just like the real deal! These cookies are just like the originals but are way more affordable to make at home.
Begin by preheating your oven to 350° and lining your baking sheet with parchment paper.
Cream together the sugar, butter, vanilla, and agave syrup.
1 cup unsalted butter, 1 ½ cups sugar, ¼ cup light agave syrup, 1 teaspoon vanilla extract
Next, add in the remaining ingredients for the cookie dough. Mix until well combined, scraping the sides as needed.
2 large eggs, 2 ¾ cup flour , 1 teaspoon cream of tartar, ½ teaspoon baking soda, ¾ teaspoon salt
In a mixing bowl, mix together the cinnamon and sugar for the topping. Form dough balls and roll into the cinnamon sugar mixture.

Place six dough balls per baking sheet and bake for 10 to 13 minutes or until the edges are golden. Let the cookies rest for 10 minutes before transferring to a cooling rack.
